The "Go To"

After trying out multiple whole wheat bread recipes, and sometimes being left unimpressed, I finally found a never fail, super delicious, super moist, light, healthy bread recipe. Did I mention that it is absolutely D E L I C I O U S?!

To give credit where credit is due, I found it when my virtual friend Kara posted it on her blog. She found it on this blog who adapted it from this blog! Four blog mentions.... and probably more... that means you should try it. Today!

Sidenote: When Davis and Anna were here, we ate nearly three loaves. I always always double the recipe because I eat almost half when it's warm out of the oven.... with real (grassfed) butter.... oh. my. goodness.

So without further ado, my version of:

Honey Whole Wheat Bread
already doubled-half the recipe for one loaf
3 cups warm water (around 110 degrees F)
4 1/2 teaspoons active dry yeast (or two packets)
1/2  cup local honey
8-9 cups whole wheat flour
1/4 cup whole or ground flax seed (or any other seed, oat, whatev)
3 teaspoons salt
4 T. butter, melted and cooled

olive oil for bowl


In a large bowl, sift (or just mix, like me) flour, flax, and salt. In another bowl mix warm water, yeast, and honey and let rest for 20 minutes (your water should be "foamy"). Add the dry ingredients and melted butter to the wet ingredients in two dumps, mixing with a wooden spoon. Dump onto a floured surface and knead (adding flour as needed) for ten minutes. Keep adding flour and kneading until dough is elast-icky but no longer sticky. Basically, dough should be easy to handle...slightly sticky is just fine.

You have now completed an arm workout! 


Dump dough in a large oiled bowl, cover, and let rise for 1 hour. After first rise, punch down (always a fun step), divide in two, and form into a loaf and place in two greased loaf pans (I prefer glass). Cover and let rise again for 45 minutes. And finally, bake at 375 degrees F for 40-50 minutes, until golden brown. Let cool in the pan at least 15 minutes (or sacrifice your fingerprints to pull it out hot and stuff it in your mouth), then transfer to wire rack to cool completely. EAT! :) 


Ummmm, yummmm! Added bonus: Nothing beats the smell of freshly baked bread right out of the oven... your house will smell delicious!
